Step 1:

Add sausage and cook breaking it up until browned and cooked through about 5 6 minutes. Drain excess fat if needed.
Step 3:
Stir in chopped spinach and cook for 1 minute until wilted. Transfer mixture to a bowl and set aside.

In a mixing bowl, whisk eggs milk salt pepper and chili powder (if using).
